Posted - 20 Sep 2002 : 13:19:58 Ingredients: 3-4 Habanero chilis. 5 g. dried African piri piri chillies. 4-5 clove garlic. 2-3 Lemongrasses. 4-5 Green chillies. 3-4 tsp. ”Colman’s ®” mustard powder. 1 lime. 1 small onion. 1 can tomatoes. 1 tsp. White cumin seeds. 2 tsp. coriander seeds. 1 cup of water. Soya sauce. 1 tbsp. vinegar. A pinch of salt.
Preparation: Grind the piri piri chilies to a fine powder (I use an electric coffee grinder), with the White cumin and coriander seeds. Peel the garlic and onion. Blend the can of tomatoes. Chop finely the lemongrass. Chop the habanero and green chillies in large. Shred the green of the lime and press the juice. Put all of it, so far, into a chopper or a blender and mix finely.
Pure a drop of oil in a heavy based small pot. Add the mixed spices and switch for a moment (mind the fumes; they can be like a mace). Add the water into the mixture. Let it boil for a moment and add the tomatoes, vinegar, soya, lime juice, mustard powder and salt. Pure it all into a glass with screw top and place it in the fridge.
NOTE: This one is my personal favorite, it’s damn hot, but really tasty !!! |
